About Me

Hello and thanks for visiting my blog! My name is Stacy and I created this blog as an outlet to talk about my life. Originally the blog was title "Stacy & Tyler's Animal Kingdom" and I wrote about my husband, Tyler, and our life with all of our lovely pets (see below to meet them!). While I still write about those things, I also write about health and well-being. 

I believe that happiness is the result of living simply and by evaluating your WHOLE life. Growing up I have struggled on and off with my weight as well as my health. I have always been interested in health and wellness, leading me to a career in nursing. I am a Registered Nurse as well as an Educator, which allows me to focus on health, teaching, and helping others. Even though I have known various ways to be healthy, I cannot always say that I have been. 


In 2011 I started a weight loss journey. I joined Weight Watchers and in one year I lost 52 lbs (slow and steady wins the race!). For 2 years I kept it off. Then over the last 2 years I have fluctuated 10-20 lbs over my goal weight. I have documented my weight loss journey, including gradually incorporating exercise into my life, which has led to a love of running, strength training, and yoga. In 2012 I was discouraged after I had lost most of the weight and my blood work still included high cholesterol. I watched a documentary called "Forks Over Knives" and from there decided to avoid all animal products for 12 weeks. After those 12 weeks, my cholesterol dropped 30 points, which was very substantial for me. Since then I have eaten a whole foods, plant-based diet. I have had some instances where I ate fish and egg whites over that time, but since the Summer of 2015 I have not had any animal products. I also have completed an elimination diet which led me to cut out products containing gluten and reducing my intake of corn, soy, and nightshades. 


In 2014 I was diagnosed with Psoriatic Arthritis, which has made my life challenging. It is similar to Rheumatoid Arthritis, where my joints are inflamed and tender and I feel regular fatigue. This life change has hampered my overall health and weight loss journey. I am still trying to navigate how to stay active and eat foods that reduce my overall inflammation. 


As mentioned before, I believe the key to a full life is by evaluating your whole life and tending to all aspects. Most of my life I have focused on fitness and nutrition as a way to feel good and confident about my life. Where I still think that is important, it is only one aspect of my life. Other aspects include relationships/social interaction, financial security, spirituality/values/beliefs, emotions, and staying intellectually stimulated. Therefore I do not just write about one thing in this blog because life is a journey and there are many different topics and interests that make up a person.

 This is Dexter. Dexter Morgan Evans. He is aptly named as he is the hunter of the 3 cats. He is quite feisty but ohsosweet and we adore him so! We rescued him in February of 2011 and he was about 9 months old at the time. 
 This is Winston Tucker Evans. He is the baby of the family, while being the largest of our fur babies, weighing 85 lbs! We rescued him in September of 2015 from Boise Bully Breed. He loves all dogs and most people (just the good ones). He is an American Staffordshire Terrier (according to his DNA test) and just the most adorable guy with the biggest head ever! 
 This is Sheldon Lee Cooper Evans. He is the baby of our kitty cats, born in August 2012. Tyler rescued him in December of 2012 as a Christmas present to me. He loves to sleep in sinks and nuzzle his pal, Winston. He is also a licker and generally licks anyone he meets. 
Which brings us to Nilly bananas! Tyler and I adopted Nilly from Tyler's sister back in December of 2010, when she was 2 1/2. We call her bananas because she does not answer to her name at all. She used to be a bit skiddish but as she has aged she is more of a snuggler and lover, frequently in Tyler's lap.

We also have 5 chickens and are named from Harry Potter-Harry, Ron, Hermione, Ginny, and Fred. We sure do appreciate them for the eggs they provide Tyler and our friends and family, as well as the awesome fertilizer they add to our compost pile!
